扇子 (‘Sensu’), stand for the Japanese word for ‘folding fan’. Each fold of the fan tells a story, a blend of craftsmanship and creativity that unfolds to reveal a world of beauty. We draw inspiration from this iconic symbol to craft a culinary experience that harmoniously blends the rich traditions of Japanese and European cuisine. Just as a sensu fan folds into itself, preserving the essence of its craftsmanship, our approach to cuisine begins with a deep respect for tradition. We meticulously select the finest ingredients from around the world, honoring the time-honoured techniques of both Japanese and European culinary arts.

Executive Chef

With over a decade of experience in the world’s most esteemed kitchens, Chef Shang Jhi has cultivated a deep passion for blending classic French techniques  with the nuances of Asian flavours.

 

A graduate of the Culinary Arts diploma program, Chef Shang has honed his craft in MICHELIN-starred institutions such as Joel Robuchon in Singapore and Macau; Les Amis as well as JAAN. He was also part of the opening team at La Dame De Pic under AnneSophie Pic where he played a pivotal

role in launching this prestigious establishment.
